Whole 30 September – Day 25

Day 25 of whole 30. So close to the end now but yet far.

Fish soup with prawns in coconut milk
1. Boil the coconut milk, kaffir lime leaves and lightly pounded lemongrass
2. Add cod and cook for about 10 minutes.
3. Add the cabbage and prawns. Cook for about 5-8 minutes.
4. Add salt and a little bit of lime juice and chili pepper as desired.

Whole 30 September – Day 24

Day 24 of whole 30. I’m craving sweet pastries like crazy today! But the berry ice cream keeps me sane.

Berry ice cream.
Mix frozen strawberries, fresh mango, and a little of coconut milk in a blender and mixed it until smooth.

Whole 30 September – Day 23

Day 23 of whole 30. This evening I had a really delicious soup with ground pork and chanterelles.

Minced pork soup
Cut vegetables in the size you want them.
1. Boil the water.
2. Add daikon radish and boil it for about 10 minutes or until it becomes soft.
3. Add carrots and cook for 5-10 minutes more.
4. Add onion, kaffir lime leaves, lightly pounded garlic and lemongrass.
5. Season ground pork with salt, black pepper and crushed garlic. Add those in as small balls.
6. Add chanterelles (or oyster mushrooms) and cook for about 5 minutes.
7. Add china cabbage.
8. Salt.
