Bean quesadillas
I made vegetarian bean quesadillas for my Saturday’s lunch. Recipe can be found here. I love this because it reminds me of California’s burritos I used to buy at the weekend street fair. It’s not quite the same but it’s still tasty and easy to do.

That looks delish, but more like an enchilada than a quesadilla, but still yummy.
For the people worried about the spicy of the jalapeno, if you remove the seeds and the ribs from the inside pepper, you take a lot of the heat out of the pepper.
